Hawaiian Banana Bread

Here is a moist, tropical-style Hawaiian Banana Bread — filled with pineapple, coconut, and nuts for that classic island flavor. 🌺🍍🍌


🍍 Hawaiian Banana Bread

Makes: 1 large loaf or 2 small loaves
Prep Time: 10 minutes
Bake Time: 55–65 minutes


Ingredients

  • 1 ¾ cups (220 g) all-purpose flour
  • 1 cup (200 g) white sugar
  • ½ cup (100 g) brown sugar (optional but adds richness)
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 large eggs
  • ½ cup (120 ml) vegetable oil (or melted butter)
  • 2–3 very ripe bananas, mashed (about 1 cup)
  • 1 tsp vanilla extract
  • ½ cup (120 ml) crushed pineapple, drained
  • ½ cup (40 g) shredded coconut (sweetened or unsweetened)
  • ½ cup (60 g) chopped walnuts or pecans (optional)
  • Optional: ½ tsp cinnamon + ¼ tsp nutmeg for warm flavor

Instructions

1. Prep

  • Preheat oven to 350°F (175°C).
  • Grease and flour a loaf pan (or line with parchment).

2. Mix Dry Ingredients

In a bowl, whisk together:

  • flour
  • baking soda
  • salt
  • (optional) cinnamon & nutmeg

3. Mix Wet Ingredients

In another bowl, combine:

  • eggs
  • oil
  • sugars
  • mashed bananas
  • vanilla

Whisk until smooth.

4. Combine

  • Add dry ingredients to wet mixture.
  • Stir gently until just combined (don’t overmix).

5. Add Mix-Ins

Fold in:

  • crushed pineapple
  • shredded coconut
  • nuts (if using)

6. Bake

  • Pour batter into prepared pan.
  • Bake 55–65 minutes, or until a toothpick inserted comes out clean.
  • Cool in pan 10 minutes, then transfer to a rack.

Tips for the Best Hawaiian Banana Bread

🌸 Use extra ripe bananas — black-spotted is perfect.
🌸 Make sure to drain the pineapple well to avoid soggy bread.
🌸 Add 2–3 tbsp pineapple juice for extra flavor (optional).
🌸 Top with coconut before baking for a toasted crust.


Variations

🍫 Hawaiian Chocolate Chip Banana Bread

Add ½–1 cup chocolate chips.

🥥 Extra Coconut Version

Replace ¼ cup of the oil with coconut oil. Add ½ cup more shredded coconut.

🍋 Tropical Lemon Glaze

Mix ½ cup powdered sugar + 1 tbsp lemon juice and drizzle over cooled loaf.
