Cheesy garlic steak bites over creamy linguine pasta

Ooooh 😋 that’s a rich and restaurant-worthy meal! Here’s a full recipe for Cheesy Garlic Steak Bites over Creamy Linguine Pasta — tender, buttery steak chunks tossed with garlicky cheese sauce and silky noodles.


🥩 Ingredients (serves 4)

For the Steak Bites

  • 1½ lbs sirloin, ribeye, or New York strip steak (cut into 1-inch cubes)

  • 2 tbsp olive oil

  • 3 tbsp butter

  • 4 cloves garlic, minced

  • Salt and black pepper, to taste

  • ½ tsp crushed red pepper (optional)

  • ½ cup shredded Parmesan or mozzarella cheese (or both!)

  • 1 tbsp chopped parsley (for garnish)

For the Creamy Linguine

  • 8 oz linguine (or fettuccine/spaghetti)

  • 1 tbsp butter

  • 2 cloves garlic, minced

  • 1 cup heavy cream (or half-and-half)

  • ½ cup grated Parmesan cheese

  • Salt and pepper, to taste


👩‍🍳 Instructions

1. Cook the Pasta

  1. Bring a large pot of salted water to a boil.

  2. Add linguine and cook according to package directions until al dente.

  3. Drain, reserving about ½ cup of pasta water. Set aside.


2. Cook the Steak Bites

  1. Pat steak cubes dry and season generously with salt and pepper.

  2. Heat olive oil in a large skillet over medium-high heat.

  3. Add steak bites in a single layer — don’t overcrowd! Sear 1–2 minutes per side until browned but still tender.

  4. Remove from skillet and set aside.

  5. Reduce heat to medium, then add butter and minced garlic to the pan.

  6. Sauté garlic for 30 seconds, then return steak bites to the pan.

  7. Toss with melted butter and sprinkle in shredded cheese. Stir until melted and gooey.


3. Make the Creamy Linguine Sauce

  1. In a separate pan (or after removing the steak), melt 1 tbsp butter over medium heat.

  2. Add garlic and sauté 30 seconds.

  3. Stir in heavy cream, then bring to a gentle simmer.

  4. Add Parmesan and whisk until melted and smooth.

  5. Season with salt and pepper.

  6. Toss the cooked linguine in the sauce, adding reserved pasta water as needed for a silky texture.


4. Combine & Serve

  • Plate the creamy linguine first.

  • Top with cheesy garlic steak bites and drizzle pan juices over the pasta.

  • Garnish with fresh parsley and a sprinkle of Parmesan.

  • Steak choice: Use tender cuts like sirloin or ribeye for juicy bites.

  • Cheese blend: Mix mozzarella (for melt) and Parmesan (for flavor).

  • Extra rich: Add a splash of white wine or a bit of cream cheese to the sauce.

  • Spicy twist: Sprinkle with crushed red pepper or drizzle with chili oil before serving.
