Here’s a simple, crispy zucchini sticks recipe you can make in the oven or air fryer!


⭐ Crispy Baked Zucchini Sticks

Ingredients

  • 2 medium zucchinis
  • 1 cup breadcrumbs (panko for extra crunch)
  • ½ cup grated Parmesan
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning (optional)
  • Salt & pepper to taste
  • 2 eggs, beaten (or milk for an egg-free option)
  • Olive oil spray

Instructions

1. Prep

  • Preheat oven to 425°F (220°C) or air fryer to 400°F (205°C).
  • Line a baking sheet with parchment.

2. Cut the zucchini

  • Slice ends off, cut each zucchini in half crosswise, then into sticks about ½–¾ inch thick.

3. Breading station

  • In one bowl: beaten eggs.
  • In another: mix breadcrumbs, Parmesan, garlic powder, Italian seasoning, salt, and pepper.

4. Coat

  • Dip each stick in egg, then roll in breadcrumb mixture until fully coated.

5. Bake or air fry

  • Oven: Arrange in one layer, spray lightly with oil, and bake 18–22 minutes, flipping halfway.
  • Air fryer: Cook 10–14 minutes, shaking halfway, until golden and crisp.

Serving ideas

  • Marinara sauce
  • Ranch dressing
  • Garlic aioli
  • Lemon wedge + sprinkle of extra Parmesan
