Crockpot Swedish Meatballs

Posted on December 3, 2025 by Admin

Here’s a comforting and easy Crockpot Swedish Meatballs recipe — tender meatballs simmered in a creamy, savory sauce. Perfect for serving over egg noodles, rice, or mashed potatoes!

🥘 Crockpot Swedish Meatballs

Ingredients (serves 4–6)

For the Meatballs

  • 1 lb ground beef (or a mix of beef & pork)
  • ½ cup breadcrumbs
  • ¼ cup milk
  • 1 small onion, finely chopped or grated
  • 1 egg
  • 1 tsp garlic powder
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ tsp allspice (optional)
  • ¼ tsp nutmeg (optional)

For the Sauce

  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard (optional)
  • 1 cup sour cream (added at the end)
  • 2 tbsp all-purpose flour (optional, for thickening)

Instructions

1. Make the meatballs

  1. In a bowl, mix breadcrumbs and milk; let soak 2–3 minutes.
  2. Add ground meat, onion, egg, and seasonings.
  3. Mix gently until combined, but don’t overwork.
  4. Form 1–1½ inch meatballs.

Optional: brown meatballs in a skillet for extra flavor before adding to the crockpot.

2. Prepare the sauce

  1. In a bowl, mix beef broth, Worcestershire sauce, and Dijon mustard.
  2. Pour a little broth into the bottom of the crockpot.

3. Cook

  1. Place meatballs in the crockpot.
  2. Pour remaining broth mixture over meatballs.
  3. Cook on LOW for 4–6 hours or HIGH for 2–3 hours.

4. Make it creamy

  1. About 15–20 minutes before serving, whisk sour cream with flour (if using) to avoid lumps.
  2. Stir into crockpot until sauce thickens and becomes creamy.
  3. Taste and adjust salt and pepper.

5. Serve

  • Over egg noodles, mashed potatoes, rice, or roasted vegetables.
  • Garnish with fresh parsley if desired.

⭐ Tips & Variations

  • Make-ahead: Meatballs can be formed and frozen for later.
  • Extra thick sauce: Use 2–3 tbsp flour or cornstarch slurry.
  • Mushroom Swedish Meatballs: Add sliced mushrooms with broth for extra flavor.
  • Make it richer: Substitute some beef broth with cream.
