Potato meatball bake

Here’s a cozy, hearty Potato Meatball Bake — layers of tender potatoes, juicy meatballs, and a creamy, cheesy sauce baked until golden and bubbly. Easy, comforting, and family-friendly!


🍽️ Potato Meatball Bake

Ingredients (serves 4–6)

For the meatballs

  • 1 lb ground beef (or beef/pork mix)
  • 1 egg
  • ½ cup breadcrumbs
  • 2 tbsp grated Parmesan
  • 2 cloves garlic, minced
  • ½ tsp onion powder
  • ½ tsp Italian seasoning
  • Salt & pepper, to taste

(You can also use frozen/pre-cooked meatballs — about 20–25.)

For the bake

  • 4–5 medium potatoes, peeled and thinly sliced
  • 1 tbsp olive oil or butter
  • 1 small onion, sliced
  • 1 cup heavy cream OR 1 can cream of mushroom/chicken soup
  • ½ cup milk or broth
  • 1–2 cups shredded cheese (mozzarella, cheddar, or a blend)
  • Salt & pepper, to taste
  • Parsley, for topping

Instructions

1. Make the meatballs (skip if using pre-cooked)

  1. Mix all meatball ingredients in a bowl.
  2. Roll into 1–1½ inch balls.
  3. Brown in a skillet for 5–6 minutes (they don’t have to be fully cooked).
  4. Set aside.

2. Prep the sauce

Choose one:

Creamy garlic sauce

  • In a small bowl whisk together:
    • 1 cup heavy cream
    • ½ cup milk/broth
    • 2 cloves garlic, minced
    • Salt & pepper

Easy shortcut sauce

  • Mix 1 can cream of mushroom/chicken soup + ½ cup milk.

3. Assemble the bake

  1. Preheat oven to 375°F (190°C).
  2. Grease a baking dish (9×13 or similar).
  3. Layer half the potatoes on the bottom.
  4. Scatter half the onions over them.
  5. Season lightly with salt & pepper.
  6. Add meatballs evenly across the dish.
  7. Add remaining potatoes and onions on top.
  8. Pour your sauce evenly over everything.
  9. Cover with foil and bake 45 minutes.

4. Add cheese & finish

  1. Remove foil.
  2. Add shredded cheese over the top.
  3. Continue baking 15–20 minutes, until potatoes are tender and cheese is golden and bubbly.

Serve

Sprinkle with parsley.
Pairs beautifully with a green salad or steamed veggies.


⭐ Variations

Cheesy Italian Style

  • Add marinara instead of cream
  • Use mozzarella + Parmesan
  • Add basil

Swedish-Style Meatball Bake

  • Use gravy instead of cream
  • Add sautéed mushrooms

Cajun Version

  • Add Cajun seasoning to sauce
  • Use pepper jack cheese
