Here’s a creamy, comforting, classic Chicken Tetrazzini recipe — a baked pasta dish with chicken, mushrooms, and a cheesy, buttery sauce.

🍝 Chicken Tetrazzini

⭐ Ingredients (Serves 6–8)

  • 12 oz spaghetti or linguine
  • 2 cups cooked chicken, shredded or diced (rotisserie works great)
  • 8 oz mushrooms, sliced
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • ½ tsp dried thyme or Italian seasoning
  • ½ cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese (for topping)
  • ½ cup breadcrumbs (optional, for topping)

👩‍🍳 Instructions

1. Cook the pasta

  • Boil pasta according to package instructions until al dente.
  • Drain and toss lightly with a little butter or oil to prevent sticking.

2. Cook vegetables

  • In a large skillet, melt butter over medium heat.
  • Sauté onions and mushrooms until tender, about 5–6 minutes.
  • Add garlic and cook 30 seconds.

3. Make the sauce

  1. Sprinkle flour over the vegetables and stir to form a roux.
  2. Gradually whisk in chicken broth and cream.
  3. Bring to a simmer until thickened (3–5 minutes).
  4. Stir in Parmesan, salt, pepper, and thyme.

4. Combine pasta, chicken, and sauce

  • In a large bowl or directly in the skillet, combine cooked pasta, chicken, and creamy sauce.
  • Mix until everything is coated evenly.

5. Assemble for baking

  • Preheat oven to 350°F (175°C).
  • Transfer mixture to a greased 9×13-inch baking dish.
  • Sprinkle mozzarella and breadcrumbs evenly on top (optional).

6. Bake

  • Bake 25–30 minutes until top is golden and bubbly.

7. Serve

  • Let rest 5 minutes before serving.
  • Optional: garnish with chopped parsley or extra Parmesan.

⭐ Tips & Variations

  • Vegetables: Add peas, bell peppers, or spinach for color and nutrition.
  • Cheese: Use Gruyère, fontina, or cheddar for a richer flavor.
  • Make-ahead: Assemble in advance, cover, and refrigerate. Bake the next day, adding 5–10 minutes to baking time.
  • Creaminess: For an extra creamy texture, stir in ¼ cup cream cheese with the sauce.
  • Protein swaps: Use turkey instead of chicken for a post-Thanksgiving twist.

If you want, I can also give you a slow-cooker Chicken Tetrazzini or a lighter, lower-carb version with zucchini noodles.
