Here’s a hearty, cozy, Southern-style Sausage, Green Bean, & Potato Casserole — simple ingredients, big comfort-food flavor. Perfect for weeknights or potlucks.


🥔 Sausage Green Bean Potato Casserole

⭐ Ingredients

  • 1 lb smoked sausage, sliced (kielbasa, andouille, or beef/pork smoked sausage)
  • 1 lb baby potatoes, halved (or 4–5 russets peeled & cubed)
  • 1 lb fresh green beans, trimmed (or 2 cans drained)
  • 1 medium onion, sliced
  • 3–4 cloves garlic, minced
  • 3 tbsp olive oil or melted butter
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½–1 tsp black pepper
  • 1 tsp salt (adjust to taste)
  • Optional: ½ tsp Cajun seasoning or crushed red pepper for spice
  • Optional: ½ cup chicken broth or 2 tbsp melted butter for extra moisture

👩‍🍳 Instructions

1. Prep the potatoes

Parcook if you want faster cooking:

  • Microwave 5–7 minutes until just starting to soften
    OR
  • Boil 7–10 minutes until barely fork-tender

(If you skip this step, just increase baking time.)


2. Mix the casserole

In a large bowl, combine:

  • potatoes
  • green beans
  • sliced smoked sausage
  • onions
  • garlic

Add:

  • olive oil/butter
  • paprika
  • garlic powder
  • onion powder
  • pepper
  • salt
  • optional Cajun seasoning

Toss well to coat everything.


3. Bake

  • Preheat oven to 400°F (205°C).
  • Spread mixture in a large baking dish.
  • Add optional chicken broth for extra moisture.
  • Cover with foil and bake 30 minutes.
  • Remove foil, stir, and bake another 15–20 minutes until potatoes and green beans are tender and edges are slightly browned.

4. Serve

Serve hot with:

  • cornbread
  • rice
  • or eat as is — it’s a full meal in one pan.

⭐ Variations

Creamy Version

Add:

  • 1 can cream of mushroom or cream of chicken
  • ½ cup shredded cheddar

Mix into casserole before baking.

Cheesy Top

Add shredded cheddar, Colby Jack, or mozzarella in the last 10 minutes of baking.

Spicy Cajun Version

Use:

  • andouille sausage
  • 1–2 tsp Cajun seasoning
  • jalapeño sliced thin

Sheet-Pan Version

Spread everything on a foil-lined sheet pan and roast at 425°F for 25–35 minutes.
