Buttermilk biscuits & jelly

Posted on November 28, 2025 by Admin

Here is a classic, fluffy Buttermilk Biscuits recipe plus a quick guide to making delicious homemade jelly (or choosing the best store-bought pairings). Perfect for breakfast or any Southern-style meal.

🧈 Old-Fashioned Buttermilk Biscuits

Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1/2 cup (1 stick) cold unsalted butter, cubed
  • 3/4 cup cold buttermilk (plus a little for brushing)

Instructions

1. Preheat & prep

  • Preheat oven to 450Β°F (232Β°C).
  • Line a baking sheet with parchment.

2. Mix dry ingredients

  • Whisk together flour, baking powder, baking soda, and salt.

3. Cut in the butter

  • Add cold butter cubes.
  • Use a pastry cutter or your fingers to work butter into the flour until pea-sized crumbs form.
    (Cold butter = flaky layers!)

4. Add buttermilk

  • Pour in the buttermilk and stir until dough just comes together β€” don’t overmix.

5. Fold for layers

  • Turn dough onto a floured surface.
  • Gently pat into a rectangle, fold in half, rotate, and repeat 3–4 times.
    (This makes flaky layers!)

6. Cut biscuits

  • Pat dough to about 1-inch thickness.
  • Cut with a round biscuit cutter or the rim of a floured glass.

7. Bake

  • Place biscuits on the tray, touching slightly for soft sides or spaced apart for crisp sides.
  • Brush tops with buttermilk.
  • Bake 12–15 minutes until golden.

πŸ‡ Jelly Pairings (Best with Buttermilk Biscuits)

Store-Bought Favorites

  • Grape jelly (classic Southern combo)
  • Strawberry jelly
  • Blackberry jam or seedless preserves
  • Peach preserves
  • Apple butter (not jelly, but amazing!)

Homemade 3-Ingredient Quick Jelly

(No canning needed if eaten within a week)

Ingredients

  • 2 cups fruit juice (grape, apple, berry, etc.)
  • 1 cup sugar
  • 2 tbsp powdered pectin

Instructions

  1. Bring juice and pectin to a boil.
  2. Add sugar and boil 1 more minute.
  3. Pour into a jar and refrigerate.
It will thicken as it cools.

⭐ Tips

  • Freeze butter before grating it into the flour for ultra-flaky biscuits.
  • Warm jelly and brush on freshly baked biscuits for a glossy finish.
  • For savory biscuits, add cheddar or herbs.
