Crockpot chicken and noodles

Posted on November 28, 2025 by Admin

Here’s a cozy, classic recipe for Crockpot Chicken and Noodles β€” tender chicken, soft noodles, and creamy, comforting sauce. Perfect for a set-it-and-forget-it meal. πŸ—πŸœβœ¨

πŸ₯˜ Crockpot Chicken and Noodles

Ingredients (serves 4–6)

  • 1.5–2 lbs boneless, skinless chicken breasts or thighs
  • 4 cups chicken broth
  • 1 medium onion, diced
  • 3–4 carrots, sliced
  • 2–3 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 tsp dried thyme (or Italian seasoning)
  • 1/2 tsp black pepper
  • 1/2 tsp salt (adjust to taste)
  • 1 cup frozen peas (optional, added at the end)
  • 8 oz egg noodles or pasta of choice
  • 1/2 cup heavy cream or 1/2 cup sour cream (optional, for creamier version)
  • 2–3 tbsp cornstarch + 2 tbsp water (optional, for thicker sauce)

Instructions

1. Add ingredients to Crockpot

  • Place chicken, broth, onion, carrots, celery, garlic, thyme, salt, and pepper into the slow cooker.

2. Cook

  • Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is tender.

3. Shred chicken

  • Remove chicken and shred with two forks.
  • Return shredded chicken to the Crockpot.

4. Add noodles

  • Add egg noodles and cook on high for 20–30 minutes until noodles are tender.
  • Stir occasionally to prevent sticking.

5. Make it creamy (optional)

  • Stir in heavy cream or sour cream for a creamy texture.
  • For thicker sauce: mix cornstarch + water, stir into the Crockpot, and cook 5–10 minutes more.

6. Add peas

  • Stir in frozen peas and cook 5 more minutes until heated through.

⭐ Tips

  • Chicken thighs are more forgiving and stay tender compared to breasts.
  • Don’t overcook noodles β€” add them toward the end to prevent mushiness.
  • Adjust seasoning at the end; sometimes the broth needs a pinch more salt or pepper.
  • Optional garnish: fresh parsley or a sprinkle of Parmesan.

🍽 Serving Ideas

  • Serve with crusty bread or dinner rolls for soaking up sauce.
  • Pair with a simple green salad for a complete meal.

If you want, I can also give a one-step crockpot version where you dump everything together including noodles and it turns out perfect every time.
