Bolognese sauce

Here is a classic, rich, slow-simmered Bolognese sauce — the Italian kind with meat, wine, milk, and a long cooking time for deep flavor. This is NOT just meat sauce; it’s silky, savory, and unbelievably good. 🍝🇮🇹


🍅 Authentic-Style Bolognese Sauce (Ragù alla Bolognese)

(Traditional, slow-cooked, deeply flavorful)

Ingredients (serves 6–8)

  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 medium onion, finely diced
  • 2 carrots, finely diced
  • 2 celery stalks, finely diced
  • 3–4 cloves garlic, minced (optional but adds flavor)
  • 1 lb ground beef (85–90% lean)
  • 1/2 lb ground pork or Italian sausage
  • 1 cup whole milk
  • 1 cup dry white wine (or red)
  • 1 can (28 oz) crushed tomatoes or 1 jar passata
  • 2–3 tbsp tomato paste
  • 1 tsp salt (to start)
  • 1/2 tsp pepper
  • 1/2–1 tsp Italian seasoning (optional)
  • 1 bay leaf (optional)
  • Parmesan rind (optional but amazing)

⏱️ Instructions (Traditional Method)

1. Sauté vegetables

In a large pot or Dutch oven, heat olive oil + butter.
Add onion, carrot, celery. Cook 7–10 minutes until soft and fragrant.

2. Add meat

Add ground beef + pork.
Cook until browned, breaking it into small pieces.
Season lightly with salt and pepper.

3. Add milk

Pour in the milk.
Simmer gently until it evaporates—about 10–15 minutes.
(This step softens the meat and adds richness.)

4. Add wine

Pour in the wine and simmer until mostly cooked off—another 10 minutes.

5. Add tomatoes

Stir in:

  • crushed tomatoes
  • tomato paste
  • bay leaf
  • optional parmesan rind

Turn heat to very low.

6. Slow simmer

Simmer 2–3 hours, stirring occasionally.
Add a splash of water or broth if it gets too thick.

7. Taste & season

Add salt, pepper, and optional Italian seasoning to taste.


🍝 How to Serve

Best with:

  • tagliatelle (traditional)
  • pappardelle
  • fettuccine
  • or spooned over gnocchi or polenta

Finish with:

  • freshly grated parmesan
  • a drizzle of olive oil
  • fresh basil (optional)

⭐ Tips for the BEST Bolognese

  • Low and slow = magic. The longer it simmers, the silkier it gets.
  • Milk before tomatoes is the Italian method.
  • A parmesan rind adds incredible depth.
  • Cut veggies very small to make the sauce cohesive.
  • Use wine (white is traditional, but red works).

🔄 Variations

Creamier (American-Italian style)

Stir in ½ cup heavy cream at the end.

Mushroom Bolognese

Add 1 cup finely chopped mushrooms.

Slow Cooker Version

After browning meat + sautéing vegetables, transfer to slow cooker and cook:

  • Low: 6–8 hours
  • High: 3–4 hours
