Ingredients (serves 4–6)

  • 2 lbs (900 g) baby red or gold potatoes, quartered (or small whole potatoes)
  • 1 packet Lipton Onion Soup Mix
  • 1/2 cup butter, cut into small pieces
  • 1/2 cup sour cream (optional, for creamier potatoes)
  • 1/2 tsp black pepper
  • Optional: chopped fresh parsley for garnish

Instructions

  1. Prepare potatoes:
    Wash and quarter potatoes (or leave small potatoes whole).
  2. Combine ingredients in slow cooker:
    Place potatoes in the slow cooker. Sprinkle onion soup mix over the potatoes. Dot with butter pieces and sprinkle with black pepper. Stir to coat.
  3. Cook:
    Cover and cook on low for 6–8 hours or on high for 3–4 hours, until potatoes are tender.
  4. Add sour cream (optional):
    For extra creamy potatoes, stir in sour cream just before serving.
  5. Serve:
    Garnish with fresh parsley if desired. Serve as a comforting side dish with beef, chicken, or pork.
