Ah, the classic Apple Slab Pie — a big, shareable, rustic dessert perfect for gatherings or just cozying up at home. 🍏🥧 Unlike a regular pie, it’s baked in a sheet pan, giving it that extra-crispy edge-to-edge crust and lots of tender apple filling. Here’s a foolproof recipe:


🍎 Apple Slab Pie

Ingredients (Serves 8–12)

For the crust

  • 2 ½ cups (315 g) all-purpose flour

  • 1 tsp salt

  • 1 cup (225 g) unsalted butter, cold and cubed

  • ½ cup (120 ml) ice water (adjust as needed)

  • 1 tbsp sugar (optional, for a slightly sweet crust)

For the filling

  • 6–7 medium apples (Granny Smith, Honeycrisp, or a mix), peeled, cored, and sliced

  • ½ cup (100 g) granulated sugar

  • ¼ cup (50 g) brown sugar

  • 2 tsp ground cinnamon

  • ¼ tsp ground nutmeg

  • 1 tbsp lemon juice

  • 2 tbsp all-purpose flour (to thicken the filling)

For topping

  • 1 egg, beaten (for egg wash)

  • 1–2 tbsp sugar (for sprinkling on top)


👩‍🍳 Instructions

1. Prepare the crust

  1. In a large bowl, combine flour, sugar, and salt.

  2. Cut in cold butter using a pastry cutter or fingertips until mixture resembles coarse crumbs.

  3. Gradually add ice water, 1 tbsp at a time, until the dough comes together.

  4. Divide dough in half, shape into disks, wrap in plastic, and chill for at least 30 minutes.


2. Prepare the filling

  1. In a large bowl, toss apple slices with sugars, cinnamon, nutmeg, lemon juice, and flour until evenly coated.

  2. Set aside.


3. Assemble the slab pie

  1. Preheat oven to 375°F (190°C).

  2. Roll out one disk of dough to fit a 13×9-inch sheet pan, leaving a slight overhang.

  3. Transfer dough to pan and press into edges.

  4. Pour the apple filling evenly over the crust.

  5. Roll out the second dough disk and place on top of the apples. Trim excess dough and crimp edges.

  6. Cut slits or a lattice on top to let steam escape.

  7. Brush top with egg wash and sprinkle with sugar.


4. Bake

  • Bake for 45–55 minutes, until the crust is golden brown and apples are bubbling.

  • Let cool slightly before cutting into squares or rectangles.


💡 Tips & Variations

  • Extra flavor: Add ½ cup chopped pecans or walnuts to the filling.

  • Crispier crust: Brush with milk or cream instead of egg wash.

  • Spice twist: Add ¼ tsp ground cloves or allspice for warmth.

  • Make ahead: Assemble ahead of time and refrigerate for up to 6 hours before baking.
