🍫 Double Chocolate Cake (Moist & Rich)
Serves: 10–12
Time: 1 hour (plus cooling)
Ingredients
For the Cake
- 1¾ cups all-purpose flour
- ¾ cup unsweetened cocoa powder
- 2 cups granulated sugar
- 1½ tsp baking powder
- 1½ tsp baking soda
- 1 tsp salt
- 2 large eggs
- 1 cup whole milk (or buttermilk for extra moisture)
- ½ cup vegetable oil
- 2 tsp vanilla extract
- 1 cup boiling water (or hot coffee for richer flavor)
- 1 cup chocolate chips (semi-sweet or dark)
For the Chocolate Frosting
- 1 cup (2 sticks) unsalted butter, softened
- ¾ cup cocoa powder
- 4 cups powdered sugar
- ½ cup heavy cream (more as needed)
- 2 tsp vanilla extract
- Pinch of salt
Instructions
1. Make the Cake
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans (or one 9×13 pan).
- In a large mixing bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- Add eggs, milk, oil, and vanilla. Mix until smooth.
- Pour in boiling water or hot coffee and mix carefully. The batter will be thin—this is correct.
- Fold in chocolate chips.
- Divide batter between pans and bake 30–35 minutes, or until a toothpick comes out with a few moist crumbs.
- Cool in pans 10 minutes, then transfer to wire racks to cool completely.
2. Make the Frosting
- Beat butter until creamy.
- Add cocoa powder and mix well.
- Slowly beat in powdered sugar, alternating with heavy cream.
- Add vanilla and a pinch of salt.
- Beat 2–3 minutes until fluffy.
- Add more cream for a softer frosting, more sugar for a firmer one.
3. Assemble
- Place first cake layer on a plate, frost top.
- Add second layer, frost top and sides generously.
- Add chocolate shavings or extra chips if you’d like.
🍰 Tips for the Best Cake
- Hot coffee deepens the chocolate flavor even if you don’t taste the coffee.
- For a super moist cake, use buttermilk.
- Chill 20 minutes before slicing for cleaner cuts.
