Chicken Thighs

Posted on November 21, 2025 by Admin

Here’s a versatile guide for cooking chicken thighs, plus a simple, flavorful recipe you can adapt for oven, stovetop, or grill. Chicken thighs are juicy, forgiving, and packed with flavor.

Basic Chicken Thighs Recipe (Oven-Roasted)

Ingredients

  • 4–6 bone-in, skin-on chicken thighs (you can also use boneless)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika (smoked or sweet, optional)
  • 1/2 teaspoon dried thyme or rosemary (optional)
  • 1 lemon, sliced (optional, for roasting)

Instructions

1. Preheat the oven

  • Preheat oven to 425°F (220°C).

2. Prepare the chicken

  • Pat chicken thighs dry with paper towels.
  • Rub olive oil all over the chicken.
  • Season with salt, pepper, garlic powder, paprika, and herbs.

3. Roast the chicken

  • Place chicken thighs on a baking sheet or oven-safe skillet, skin-side up.
  • Optional: scatter lemon slices around for extra flavor.
  • Roast 35–45 minutes, until skin is golden and crispy and internal temperature reaches 165°F (74°C).

4. Rest and serve

  • Let chicken rest 5 minutes before serving to keep it juicy.

Tips

  • For extra crisp skin: Broil for 2–3 minutes at the end.
  • Boneless thighs: Reduce cooking time to 20–25 minutes.
  • Flavor variations:
    • Asian-style: Soy sauce, ginger, garlic, sesame oil, honey glaze.
    • Mediterranean: Lemon, oregano, garlic, and olive oil.
    • BBQ: Brush with barbecue sauce in the last 10 minutes of roasting.

Quick Stovetop Option

  1. Heat 2 tablespoons oil in a skillet over medium-high heat.
  2. Sear chicken thighs skin-side down for 5–6 minutes until golden.
  3. Flip, reduce heat to medium, cover, and cook 10–12 minutes until done.
