They’re typically cooked low and slow with seasonings and a bit of fat (like bacon or ham), which infuses them with tons of flavor. Here’s a simple, classic recipe for Southern-style green beans:

Ingredients:

  • 1 lb fresh green beans (trimmed and snapped into bite-sized pieces)
  • 3-4 slices of bacon (or 1/2 cup diced ham or smoked sausage for a different flavor)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1/2 tsp salt (or more to taste)
  • 1/4 tsp black pepper (or more to taste)
  • 1 tsp sugar (optional, to balance the flavors)
  • 1/2 tsp crushed red pepper flakes (optional, for a bit of heat)
  • 2 cups low-sodium chicken broth (or vegetable broth for a vegetarian version)
  • 1 tbsp olive oil (optional, if not using bacon)
  • 1/4 cup water (if needed)

Instructions:

1. Cook the bacon:

  • In a large skillet or Dutch oven, cook the bacon over medium heat until it’s crispy and the fat has rendered, about 5-7 minutes. If you’re using ham or sausage, skip this step and proceed to cooking the onion in the fat directly.

2. Sauté the onions and garlic:

  • Once the bacon is crispy, remove it from the skillet and crumble it into small pieces, leaving the bacon grease in the pan. If you’re using ham or sausage, just sauté the onions in a little bit of oil or butter.
  • Add the chopped onion to the pan and cook over medium heat for about 3-4 minutes until the onion becomes translucent and soft.
  • Add the minced garlic and cook for another 30 seconds until fragrant.

3. Add the green beans:

  • Add the green beans to the pan, stirring them into the bacon and onion mixture. Season with salt, pepper, and a pinch of crushed red pepper flakes (if using). Stir to combine.

4. Simmer the beans:

  • Pour in the chicken broth and bring to a simmer. Add a bit of water if the liquid doesn’t quite cover the beans. Stir in the sugar if you’re using it (this balances the earthy flavors of the beans).
  • Cover the pan with a lid and let the beans simmer for 30-40 minutes, stirring occasionally, until the beans are tender and flavorful. If you want the beans to be more tender or cook faster, you can simmer them for an hour or more on low heat.

5. Finish and serve:

  • Once the beans are tender and the liquid has reduced to a flavorful broth, taste and adjust seasoning as needed (add more salt, pepper, or a little more sugar if you like).
  • Crumble the crispy bacon back into the pot, stirring it into the beans, and serve hot.

Tips for Perfect Southern Green Beans:

  • Fresh or Frozen Beans: Fresh green beans are best for this recipe, but frozen green beans can work too. Just be sure to adjust the cooking time accordingly, as frozen beans don’t need as long to cook.
  • For extra smokiness: If you like a smoky flavor, you can add a smoked ham hock or a few slices of smoked sausage to the pot while simmering the green beans. Remove the ham hock after the beans have cooked and shred the meat into the beans for extra flavor.
  • Adjusting tenderness: If you like your green beans extra tender, feel free to simmer them longer, and add more broth or water as needed.
  • Add a little acidity: A squeeze of lemon juice or a splash of vinegar just before serving can brighten up the flavors and add balance to the richness.
