Whether you’re grilling breasts, thighs, or even a whole chicken, the key to great grilled chicken is getting that juicy, tender interior with a flavorful, crispy exterior. Here’s a simple and foolproof recipe for perfectly grilled chicken:

Simple Grilled Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts (or thighs if you prefer dark meat)
  • 2 tbsp olive oil
  • 1 lemon (juice and zest)
  • 3 cloves garlic, minced
  • 1 tsp dried oregano (or fresh if you have it)
  • 1 tsp paprika
  • 1/2 tsp ground cumin (optional for extra flavor)
  • Salt and freshly ground black pepper, to taste
  • Fresh herbs (optional, for garnish – such as parsley, thyme, or rosemary)

Instructions:

1. Prep the chicken:

  • If using chicken breasts, consider gently pounding them to an even thickness with a meat mallet or rolling pin (between two sheets of plastic wrap). This ensures even cooking and prevents dry spots.
  • Pat the chicken dry with paper towels to ensure the marinade adheres better.

2. Make the marinade:

  • In a small bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, oregano, paprika, cumin, salt, and pepper.
  • Pour the marinade over the chicken breasts (or thighs) in a shallow dish or a large resealable bag. Seal the bag or cover the dish and refrigerate for at least 30 minutes to an hour (or up to overnight for more flavor).

3. Preheat the grill:

  • Preheat your grill to medium-high heat (around 400°F or 200°C). If you’re using a charcoal grill, let the coals burn down until they’re covered with white ash for an even heat.
  • Clean the grill grates with a brush and lightly oil them with a paper towel dipped in vegetable oil to prevent sticking.

4. Grill the chicken:

  • Place the chicken on the preheated grill. Grill the chicken for about 6-7 minutes per side, depending on the thickness of the chicken. You want to get a nice golden-brown sear on the outside while ensuring the chicken is cooked through to an internal temperature of 165°F (75°C).
  • If the chicken starts to flare up (due to dripping marinade), move it to a cooler part of the grill to avoid burning.

5. Rest the chicken:

  • Once the chicken is cooked, remove it from the grill and let it rest for about 5 minutes. This helps the juices redistribute and keeps the chicken moist.

6. Serve:

  • Slice the chicken and serve with your favorite sides, like grilled veggies, a salad, rice, or mashed potatoes. Garnish with fresh herbs like parsley or thyme for a burst of freshness.

Tips for Perfect Grilled Chicken:

  • Marinating time: If you’re in a rush, even 30 minutes of marinating will make a difference, but for maximum flavor, let the chicken sit in the marinade for several hours or overnight.
  • Avoid overcooking: Chicken breasts are lean and can dry out easily, so keep an eye on the grill and check the internal temperature early. Use a meat thermometer for accuracy.
  • Bone-in chicken: If you’re grilling bone-in chicken pieces (like thighs or drumsticks), they will take longer to cook—about 30-40 minutes depending on size. Use indirect heat to cook them through without burning the outside.
  • Grill marks: For those beautiful grill marks, rotate the chicken 90 degrees halfway through cooking on each side.

Optional Variations:

  • BBQ Grilled Chicken: Brush the chicken with your favorite BBQ sauce during the last 3-4 minutes of grilling, turning often to avoid burning.
  • Spicy Grilled Chicken: Add chili powder, cayenne, or smoked paprika to the marinade for a spicy kick.
  • Herb Grilled Chicken: Add fresh herbs like rosemary, thyme, or basil to the marinade for a fresh, fragrant twist.
