🥐 Savory Mushroom & Gruyère Puff Pastry Braid

Ingredients:

  • 1 sheet frozen puff pastry, thawed (about 8–10 oz)

  • 2 tbsp olive oil or butter

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 8 oz mushrooms (cremini, button, or a mix), finely chopped

  • ½ tsp salt

  • ¼ tsp black pepper

  • ¼ tsp thyme (or fresh thyme leaves)

  • 1 cup grated Gruyère cheese

  • 1 egg, beaten (for egg wash)

  • Optional: 2 tbsp cream cheese or ricotta for extra creaminess


Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. Cook the mushroom filling:
    Heat olive oil or butter in a skillet over medium heat. Add onions and sauté until translucent. Add garlic and mushrooms, season with salt, pepper, and thyme, and cook until mushrooms release moisture and it evaporates (about 5–7 minutes). Let cool slightly.
    (Optional: stir in cream cheese for a creamier filling.)

  3. Prepare puff pastry:
    Roll out the puff pastry on a lightly floured surface into a rectangle (about 10×12 inches).

  4. Assemble the braid:

    • Spread mushroom mixture down the center of the pastry, leaving ~2 inches on each side.

    • Sprinkle Gruyère evenly on top of the mushrooms.

    • Cut 1-inch strips along both long sides of the pastry, making diagonal slits.

    • Fold the strips over the filling, alternating sides to create a braid pattern.

  5. Egg wash:
    Brush the top of the braid with beaten egg for a golden finish.

  6. Bake:
    Bake for 25–30 minutes, until puffed and golden brown.

  7. Serve:
    Let cool for 5 minutes, slice, and enjoy warm.


Variations & Tips:

  • 🌿 Herbs: Add fresh parsley, tarragon, or chives to the mushroom filling.

  • 🧄 Garlic boost: Roast garlic cloves and mix into the filling for deeper flavor.

  • 🥬 Extra veggies: Spinach, caramelized onions, or roasted red peppers work beautifully.

  • 🧀 Cheese swap: Swiss, Fontina, or even a sharp cheddar works in place of Gruyère.
