Here’s a fun and easy Walking Taco Casserole — all the flavors of a “walking taco” (taco meat, cheese, and toppings in a bag) baked into a convenient, family-friendly dish. 🌮🧀


🌮 Walking Taco Casserole

Serves: 6–8
Prep & Cook: ~40 minutes

Ingredients

For the taco meat layer:

  • 1 lb ground beef (or turkey/chicken)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or 2–3 tbsp homemade)
  • 1/2 cup water

For the casserole:

  • 1 (10–12 oz) bag tortilla chips (or Doritos for fun flavor)
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1/2 cup salsa (mild or hot, your choice)
  • Optional: 1/2 cup black beans or corn

Toppings (after baking):

  • Sour cream
  • Sliced jalapeños
  • Chopped tomatoes
  • Shredded lettuce
  • Green onions or cilantro
  • Avocado or guacamole

Instructions

1. Cook the taco meat

  1. In a skillet over medium heat, brown the ground beef with onions and garlic.
  2. Drain excess fat.
  3. Stir in taco seasoning and water. Simmer 3–5 minutes until thickened.

2. Assemble the casserole

  1. Preheat oven to 350°F (175°C).
  2. In a greased 9×13-inch baking dish, crush half the tortilla chips and spread evenly on the bottom.
  3. Layer taco meat over the chips.
  4. Add black beans/corn if using.
  5. Sprinkle shredded cheese on top.
  6. Crush remaining chips and sprinkle over cheese for extra crunch.
  7. Drizzle salsa over the top.

3. Bake

  • Bake 15–20 minutes until cheese is melted and bubbly.
  • Optional: broil 1–2 minutes for extra crispy edges.

4. Add toppings & serve

  • Remove from oven, let cool 5 minutes.
  • Add desired toppings: sour cream, lettuce, tomatoes, avocado, jalapeños, or cilantro.
  • Serve like a “walking taco” — fork or scoop and enjoy!

  • Slow cooker version — layer chips, meat, cheese in a slow cooker and cook on low 2–3 hours.
  • Chicken or turkey version
  • Spicy version — add diced green chilies or hot sauce.
  • Tex-Mex deluxe — layer with refried beans and corn for a heartier casserole.
