Lunchroom Ladies Brownies

Here is the classic Lunchroom Ladies Brownies recipe — the old-fashioned, moist, fudgy, cake-like brownies served in school cafeterias in the 1960s–1980s. They’re famous for their soft texture and simple chocolate frosting. 🍫


🍫 Lunchroom Ladies Brownies (Classic School Cafeteria Style)

Ingredients

Brownies

  • 1 cup butter, melted
  • 1/2 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tbsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp salt

Frosting

  • 1/4 cup butter, softened
  • 1/4 cup milk
  • 1/4 cup unsweetened cocoa powder
  • 3 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

1. Make the brownies

  1. Preheat oven to 350°F (175°C).
  2. Grease a 13×9-inch baking pan.
  3. In a large bowl, mix melted butter and cocoa until smooth.
  4. Add sugar and mix well.
  5. Add eggs one at a time, stirring after each.
  6. Add vanilla.
  7. Add flour and salt; stir just until combined — don’t overmix.
  8. Spread batter into the prepared pan.
  9. Bake 22–25 minutes, until set but still soft (don’t overbake!).

Let brownies cool for 10–15 minutes before frosting.


2. Make the frosting

  1. Beat butter, milk, cocoa, and vanilla until smooth.
  2. Add powdered sugar gradually until creamy and spreadable.
  3. Spread over the warm brownies (key for the classic shiny, fudgy top).

3. Slice & serve

Cut into small squares — they’re rich!
Perfectly chewy, fudgy, and nostalgic.
