Cheesy chicken fritters

Here’s a juicy, cheesy, golden-brown Chicken Fritter recipe — one of the BEST ways to use chicken breast. These are tender, flavorful, and perfect as a snack, meal, or appetizer!


🧀 Cheesy Chicken Fritters

Soft inside, crispy outside, loaded with melty cheese.

Ingredients

For the fritters:

  • 1 ½ lbs chicken breast, finely diced (not ground!)
  • 2 large eggs
  • 1 cup shredded mozzarella (or cheddar)
  • 1/3 cup Parmesan, grated (optional but delicious)
  • 3 tbsp mayonnaise or sour cream
  • 1/3 cup flour OR 1/2 cup breadcrumbs
  • 2–3 garlic cloves, minced
  • 1 tbsp chopped parsley (optional)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • Oil for frying

Instructions

1. Mix the batter

  1. Dice chicken VERY small (pea-sized pieces).
  2. In a large bowl, combine chicken, eggs, cheeses, mayo, flour/breadcrumbs, garlic, parsley, and seasonings.
  3. Mix well until sticky and fully combined.
  4. Let the mixture rest 10–15 minutes — this helps it bind.

2. Fry the fritters

  1. Heat 2–3 tbsp oil in a skillet over medium heat.
  2. Scoop the mixture (about 2 tbsp per fritter) and gently flatten into the pan.
  3. Cook 3–4 minutes per side, until golden and the chicken is fully cooked.
  4. Transfer to paper towels.

3. Serve

Serve warm with dipping sauces like:

  • Garlic aioli
  • Ranch
  • Spicy mayo
  • Sweet chili sauce
