Chocolate and pecan billionaires

Posted on November 20, 2025 by Admin

Ah! You’re talking about chocolate and pecan “billionaires” — a type of decadent layered treat, often called billionaire bars. They usually have three layers: shortbread, caramel, and chocolate, sometimes with nuts like pecans. Here’s a classic recipe:

Chocolate & Pecan Billionaires Recipe

Makes: 12–16 bars
Prep & Cook Time: ~40 minutes (plus chilling)

Ingredients:

For the Shortbread Base:

  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 tsp salt

For the Caramel Layer:

  • 1 cup unsalted butter
  • 1 cup brown sugar, packed
  • 1/4 cup corn syrup or honey
  • 1 can (14 oz) sweetened condensed milk
  • 1 tsp vanilla extract
  • 1 cup chopped pecans

For the Chocolate Topping:

  • 1 1/2 cups semi-sweet or dark chocolate chips
  • 1 tbsp butter or coconut oil (optional, for glossy finish)

Instructions:

  1. Prepare the base:
    • Preheat oven to 350°F (175°C).
    • Mix butter, sugar, flour, and salt until a dough forms.
    • Press into a greased 9×13-inch pan.
    • Bake 15–20 minutes until lightly golden. Let cool slightly.
  2. Make the caramel-pecan layer:
    • In a saucepan, melt butter, brown sugar, and corn syrup together.
    • Stir in sweetened condensed milk. Bring to a gentle boil for 5–7 minutes, stirring constantly.
    • Remove from heat, add vanilla and chopped pecans.
    • Pour over the baked shortbread layer. Let cool for 10 minutes.
  3. Add chocolate topping:
    • Melt chocolate (with butter/coconut oil if desired) in a double boiler or microwave.
    • Pour evenly over the caramel-pecan layer and spread smooth.
  4. Chill and serve:
    • Refrigerate for at least 1–2 hours until firm.
    • Cut into bars and serve.

💡 Tip: For extra crunch, toast the pecans before adding. You can also drizzle white chocolate on top for a fancy finish.

If you want, I can also give a super fast, no-bake version of chocolate pecan billionaires that’s ready in about 15 minutes. Do you want me to make that version too?
