🍲 Okra Soup with Shrimp

Ingredients (4 servings)

Vegetables & Okra Base

  • 2 cups fresh okra, chopped (or frozen okra)
  • 1 medium onion, chopped
  • 2–3 cloves garlic, minced
  • 1–2 tomatoes, chopped (or 1 cup canned)
  • 1–2 green bell peppers, chopped
  • 1–2 Scotch bonnet peppers (optional, for heat)
  • 2 cups spinach or ugu (optional leafy greens)

Protein

  • 1 lb (450 g) shrimp, peeled and deveined
  • Optional: ½ lb (225 g) beef, goat meat, or fish chunks

Liquid & Seasoning

  • 4 cups chicken or vegetable stock
  • 2–3 tbsp palm oil or vegetable oil
  • 1 tsp smoked paprika
  • ½ tsp cayenne pepper (optional)
  • 1 tsp thyme
  • 1–2 bouillon cubes (or salt to taste)
  • Salt and black pepper, to taste

Instructions

1. Prep Shrimp

  1. Season shrimp lightly with salt and pepper.
  2. Sauté in a small pan with 1 tbsp oil until pink and just cooked (2–3 min per side). Set aside.

2. Cook the Vegetables

  1. Heat 2–3 tbsp palm oil in a large pot.
  2. Sauté onions and garlic until translucent.
  3. Add chopped tomatoes and bell peppers; cook 5–7 minutes until soft.
  4. Add spices: paprika, thyme, cayenne, salt, and bouillon cubes. Mix well.

3. Add Okra & Liquid

  1. Stir in chopped okra and cook 3–5 minutes.
  2. Pour in stock and bring to a gentle simmer.
  3. Cook for 10–15 minutes, stirring occasionally, until okra thickens the soup slightly.

4. Add Shrimp & Greens

  1. Add cooked shrimp and leafy greens (spinach or ugu).
  2. Simmer 2–3 minutes until greens wilt and shrimp are heated through.
  3. Adjust seasoning to taste.

5. Serve

  • Serve hot with white rice, fufu, pounded yam, or eba.
  • Garnish with chopped fresh parsley or extra chili if desired.

  • Okra can get slimy; chop finely for more viscosity or coarsely for a lighter texture.
  • For a richer flavor, you can add a small handful of crayfish or smoked fish.
  • Freeze extra okra soup—it reheats well and retains flavor.
