Here’s a soft, chewy, irresistible recipe for Banana Bread Cookies — all the cozy flavor of banana bread but in easy cookie form!


🍌 Banana Bread Cookies

Makes about 20–24 cookies


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp cinnamon
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup mashed ripe banana (about 2 medium bananas)
  • Optional add-ins:
    • ½–1 cup chocolate chips
    • ½ cup chopped walnuts or pecans
    • ½ cup oats for extra texture

Instructions

1. Preheat

  • Preheat oven to 350°F (175°C).
  • Line baking sheets with parchment paper.

2. Mix dry ingredients

  • In a bowl, whisk flour, baking powder, baking soda, cinnamon, and salt.

3. Cream butter & sugars

  • In a large bowl, beat butter, brown sugar, and granulated sugar until fluffy.
  • Add egg and vanilla, and mix until smooth.

4. Add banana

  • Mix in mashed banana (batter will be soft—this is normal).

5. Combine

  • Add dry ingredients to the wet ingredients and stir until just combined.
  • Fold in any optional add-ins.

6. Scoop & bake

  • Scoop tablespoon-size dollops onto baking sheet (these spread a little).
  • Bake 10–12 minutes, until edges are lightly golden and centers look set.
  • Cool on the pan 5 minutes before transferring to a rack.

  • Banana Bread Breakfast Cookies: Add oats + nuts + chocolate chips; flatten slightly before baking.
  • Frosted Banana Cookies: Add cream cheese frosting after cooling.
  • Stronger banana flavor: Use extra-ripe bananas with brown speckles.
  • Cakeier cookies: Increase flour to 1¾ cups.
  • Chewier cookies: Add 1 tbsp honey or maple syrup.
