Streuseltaler

Here’s a traditional Streuseltaler recipe—these are German-style sweet yeast buns topped with a buttery crumb (streusel). Perfect for breakfast, coffee breaks, or dessert!


🍪 Streuseltaler (German Crumb Buns)

Makes 8–10 buns


Ingredients

For the dough

  • 2 ½ cups all-purpose flour
  • ½ cup milk, warm
  • ¼ cup granulated sugar
  • ¼ cup unsalted butter, melted
  • 1 large egg
  • 1 tsp instant yeast
  • ¼ tsp salt

For the streusel topping

  • ½ cup all-purpose flour
  • ¼ cup granulated sugar
  • ¼ cup brown sugar
  • 3 tbsp cold butter, cubed
  • Optional: ½ tsp cinnamon or vanilla sugar

Optional filling

  • Jam, fruit compote, or cream cheese

Instructions

1. Make the dough

  1. In a small bowl, dissolve yeast in warm milk with a pinch of sugar. Let sit 5 minutes until frothy.
  2. In a large bowl, mix flour, sugar, and salt. Add egg and melted butter, then the yeast mixture.
  3. Knead for 5–7 minutes until smooth and elastic.
  4. Cover and let rise 1–1.5 hours until doubled in size.

2. Prepare the streusel

  1. Mix flour, sugar(s), and optional cinnamon in a bowl.
  2. Cut in cold butter until mixture resembles coarse crumbs.

3. Shape the buns

  1. Punch down dough and divide into 8–10 pieces.
  2. Shape each into a ball and place on a parchment-lined baking sheet.
  3. Optional: Press a small well in the center for jam or fruit.

4. Add streusel

  • Sprinkle generous amounts of streusel on top of each bun.

5. Bake

  • Preheat oven to 375°F (190°C).
  • Bake 20–25 minutes until golden brown.
  • Let cool slightly before serving.

Tips

  • Serve warm with coffee or tea.
  • Streusel can be flavored with almond extract, cinnamon, or nuts.
  • For a softer bun, brush tops with a little milk or egg wash before sprinkling streusel.
