Here’s a crispy, flavorful Popeye’s-style fried chicken recipe you can make at home—super close to the original without deep-frying disasters.

Ingredients (for 4 servings)

For the chicken marinade:

  • 2 lbs chicken pieces (drumsticks, thighs, wings)
  • 2 cups buttermilk
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp cayenne (optional, for heat)

For the coating:

  • 2 cups all-purpose flour
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp cayenne pepper

For frying:

  • Vegetable oil or peanut oil (enough for 1–2 inches in a skillet)

Instructions

  1. Marinate the chicken
    • Mix buttermilk, paprika, garlic powder, onion powder, salt, pepper, and cayenne.
    • Submerge chicken pieces in marinade. Cover and refrigerate at least 4 hours, ideally overnight.
  2. Prep the coating
    • In a large bowl or bag, mix flour with paprika, garlic powder, onion powder, salt, pepper, and cayenne.
  3. Coat the chicken
    • Remove chicken from marinade, letting excess drip off.
    • Dredge in flour mixture, pressing lightly to adhere.
    • Optional: For extra crunch, dip once more in buttermilk then flour again (double coating).
  4. Fry the chicken
    • Heat 1–2 inches of oil in a deep skillet or Dutch oven to 350°F (175°C).
    • Fry chicken in batches, skin-side down first, 12–15 minutes per batch, turning occasionally, until golden brown and internal temperature reaches 165°F (74°C).
    • Drain on paper towels.
  5. Serve
    • Let rest 5 minutes and enjoy with mashed potatoes, coleslaw, or your favorite dipping sauce.

Tips for Extra “Popeye’s” Flavor

  • Spicy kick: Add ½ tsp cayenne to the flour mix and another ½ tsp smoked paprika.
  • Crispier coating: Add 2 tbsp cornstarch to the flour.
  • Oven-finish option: Fry until golden, then finish in a 375°F (190°C) oven for 10 minutes to ensure fully cooked inside without burning outside.
