Gumbo greens with cabbage

Here’s a hearty, flavorful Gumbo Greens with Cabbage recipe — a Southern-style pot of tender greens simmered low and slow with smoked meat, spices, and cabbage. It’s rich, soulful, and perfect with cornbread.

This dish is like a cross between collards + gumbo, full of deep smoky flavor and thick, savory potlikker.


🥬 Gumbo Greens With Cabbage

Serves: 6–8
Prep Time: 15 minutes
Cook Time: 1½–2 hours (longer for deeper flavor)


⭐ Ingredients

  • 1 large bunch collard greens, washed and cut
  • 1 bunch mustard greens (or turnip greens), washed and cut
  • 1/2 head green cabbage, chopped
  • 1 large onion, chopped
  • 4–5 garlic cloves, minced
  • 1 smoked turkey leg or 1 lb smoked neck bones
  • OR 1 lb smoked sausage, sliced
  • 1 tbsp vegetable oil or bacon grease
  • 6 cups chicken broth (or water + bouillon)
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2–1 tsp Cajun seasoning (to taste)
  • 1 bay leaf
  • 1 tbsp vinegar or 1 tsp sugar (optional—helps balance bitterness)
  • Salt to taste
  • Optional heat: 1 tsp crushed red pepper or a splash of hot sauce

🍳 Instructions

1️⃣ Sauté the Base

  • In a large pot or Dutch oven, heat oil/bacon grease over medium heat.
  • Add onions and cook 3–4 minutes.
  • Add garlic and cook 1 more minute, until fragrant.

2️⃣ Add the Smoked Meat

  • Add smoked turkey leg/neck bones (or sausage).
  • Pour in chicken broth.
  • Add black pepper, paprika, garlic powder, onion powder, bay leaf, Cajun seasoning.
  • Bring to a simmer.

If using smoked turkey: Let it simmer 20–30 minutes first to tenderize before adding greens.


3️⃣ Add Greens and Cabbage

  • Add collard greens first (they take longer).
  • After 10 minutes, add mustard/turnip greens and cabbage.
  • Stir and press everything down into the broth.

4️⃣ Simmer

Cover and cook on low for 1½–2 hours, stirring occasionally.

  • The broth should turn into a rich potlikker.
  • Add more broth or water if needed.

When the smoked meat is tender, remove it, pull off the meat, shred it, and return it to the pot.


5️⃣ Final Seasoning

Taste the potlikker and adjust:

  • Add salt if needed
  • Add vinegar or sugar (optional)
  • Add hot sauce or pepper flakes if you want heat

Let simmer another 10 minutes.


🥄 Serve

Serve hot with:

  • Cornbread
  • Rice
  • Smoked sausage
  • Hot sauce
  • Fried chicken or pork chops

The greens should be silky and coated in flavorful broth with tender cabbage and smoky meat.


🔄 Variations

“Gumbo” Style Roux Add-In

For true gumbo richness:

  • Make a small dark roux (2 tbsp oil + 2 tbsp flour)
  • Stir it into the greens during the last 30 minutes.

Creole Version

Add:

  • 1 bell pepper
  • 2 celery stalks
  • 1 tsp thyme

Spicy Cajun Version

Use:

  • Andouille sausage
  • Extra Cajun seasoning
  • A dash of cayenne
