Here’s a recipe for Juicy Homemade Meatballs—tender, flavorful, and perfect for serving with pasta, in sandwiches, or just as a snack with marinara sauce. These meatballs are packed with flavor and moisture, thanks to a secret ingredient (hint: milk-soaked breadcrumbs)!


🍝 Homemade Meatballs

Cook Time: 20–25 minutes


Ingredients

  • 1 lb ground beef (or a mix of beef and pork for more flavor)
  • 1/2 cup breadcrumbs (preferably fresh)
  • 1/4 cup milk (for soaking the breadcrumbs)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped (or 2 tbsp dried parsley)
  • 1 large egg
  • 2 garlic cloves, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp crushed red pepper flakes (optional, for a bit of heat)
  • 1/2 tsp dried oregano or Italian seasoning
  • 2 tbsp olive oil (for frying)
  • Optional for serving: Marinara sauce, fresh basil, more Parmesan cheese

Instructions

1. Prepare the Breadcrumbs:

  • In a small bowl, combine breadcrumbs and milk. Let them sit for about 5 minutes to soak up the liquid. This helps keep the meatballs moist.

2. Mix the Meatball Ingredients:

  • In a large bowl, combine the soaked breadcrumbs with the ground beef, Parmesan cheese, parsley, egg, garlic, salt, pepper, red pepper flakes, and oregano.
  • Use your hands to mix everything together until just combined. Be careful not to overmix, or the meatballs may be tough.

3. Form the Meatballs:

  • Use your hands to shape the mixture into 1 to 1.5-inch meatballs. You should get about 16–20 meatballs, depending on the size.

4. Cook the Meatballs:

  • Heat olive oil in a large skillet over medium-high heat.
  • Once the oil is hot, add the meatballs in batches (don’t overcrowd the pan). Brown the meatballs on all sides, about 5–7 minutes.
  • If you like them crispy on the outside, don’t move them around too much—let them sear before flipping.

5. Finish Cooking (Optional for Tenderness):

  • If you prefer your meatballs cooked through in the center, after browning, you can add a bit of marinara sauce to the skillet, cover, and let the meatballs simmer in the sauce for another 10–15 minutes. This ensures they stay juicy and fully cooked.

6. Serve:

  • Serve the meatballs over pasta, in a sub sandwich with melted mozzarella, or just with a side of marinara sauce for dipping.
  • Garnish with fresh basil and extra Parmesan if you like.

Tips & Variations:

  • Meat options: Feel free to mix and match your meats—beef and pork is a classic combo, but you could also use ground turkey or chicken for a leaner version.
  • For extra moisture: Try adding a tablespoon of olive oil or a small amount of grated mozzarella to the mixture.
  • Flavor boosters: For more flavor, add a splash of Worcestershire sauce or a tablespoon of tomato paste to the mix.
  • Baking method: If you prefer baking, place meatballs on a parchment-lined baking sheet and bake at 375°F (190°C) for 15–20 minutes, or until cooked through.
