Ingredients

For the Steak:

  • 2 boneless ribeye or sirloin steaks (about 1 inch thick)
  • Salt and pepper, to taste
  • 1 tbsp olive oil (or vegetable oil)
  • 2 tbsp unsalted butter
  • 2 cloves garlic, crushed (for searing)
  • 1–2 sprigs fresh rosemary or thyme (optional, for extra flavor)

For the Creamy Garlic Sauce:

  • 1 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup chicken or beef broth
  • 1 tbsp Dijon mustard (optional, for tang)
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (optional, for extra creaminess)
  • Fresh parsley, chopped (for garnish)

Instructions

1. Prepare the Steaks:

  • Remove the steaks from the fridge about 20–30 minutes before cooking to allow them to come to room temperature (this helps them cook more evenly).
  • Season the steaks generously with salt and pepper on both sides.

2. Cook the Steaks:

  • Heat a large skillet (preferably cast iron) over medium-high heat and add 1 tbsp olive oil.
  • When the oil is hot and shimmering, add the steaks to the pan. For a medium-rare steak, cook for about 3–4 minutes per side (adjust depending on thickness and preferred doneness).
  • During the last minute of cooking, add 2 tbsp butter, crushed garlic cloves, and fresh herbs (if using) to the pan.
  • Baste the steaks with the butter and garlic mixture for extra flavor.
  • Remove the steaks from the skillet and let them rest for about 5 minutes.

3. Make the Creamy Garlic Sauce:

  • In the same skillet, melt 1 tbsp butter over medium heat.
  • Add the minced garlic and cook for about 1 minute until fragrant (don’t burn the garlic!).
  • Pour in the heavy cream and chicken broth, scraping up any browned bits from the bottom of the pan.
  • Stir in Dijon mustard (if using) and onion powder, and let the sauce simmer for 3–4 minutes to thicken.
  • If you want a richer sauce, add Parmesan cheese and stir until melted and smooth.
  • Season with salt and pepper to taste. If the sauce is too thick, add a little more broth or cream to reach your desired consistency.

4. Serve:

  • Place the rested steaks on serving plates.
  • Spoon the creamy garlic sauce over the top.
  • Garnish with freshly chopped parsley for color and freshness.

Tips & Variations:

  • Doneness: If you prefer your steak well-done, you can use a meat thermometer:
    • Medium-rare: 130–135°F (54–57°C)
    • Medium: 140–145°F (60–63°C)
    • Medium-well: 150–155°F (66–68°C)
  • Extra flavor: Add a dash of Worcestershire sauce or a spoonful of sour cream to the creamy sauce for a deeper, tangy flavor.
  • Mushrooms: You can add sautéed mushrooms to the garlic sauce for an even richer dish.
  • Side suggestions: This steak pairs perfectly with mashed potatoes, roasted vegetables, or a simple green salad.
