  • 1 lb ground beef

  • 1/2 tsp chili powder (optional for a little kick)
  • 1 cup shredded cheddar cheese (or mozzarella, or a mix)
  • 6–8 flour tortillas (small or medium size)
  • 1/2 cup tomato sauce, salsa, or marinara sauce
  • 1 tbsp olive oil or butter (for cooking)
  • Optional toppings: sour cream, chopped parsley, green onions, or extra shredded cheese

Instructions

1. Cook the Beef:

  • Heat olive oil in a large skillet over medium heat.
  • Add the onion and garlic, sauté for 2–3 minutes until softened.
  • Add the ground beef, breaking it apart with a spatula. Cook until browned and no longer pink, about 5–7 minutes.
  • Season with salt, pepper, paprika, and chili powder. Stir to combine.
  • Remove from heat and let it cool slightly.

2. Assemble the Roll-Ups:

  • Lay out the tortillas on a clean surface.
  • Spread a thin layer of tomato sauce or salsa on each tortilla.
  • Evenly distribute the beef mixture across the tortillas.
  • Sprinkle shredded cheese over the beef.
  • Roll up the tortillas tightly, folding in the sides slightly if desired to prevent filling from spilling.

3. Bake the Roll-Ups:

  • Preheat your oven to 375°F (190°C).
  • Place the roll-ups seam-side down in a greased baking dish.
  • Bake for 10–15 minutes, or until the cheese is melted and the edges of the tortillas are lightly golden.
  • Optional: Broil for 1–2 minutes at the end for extra crispiness on top.

4. Serve:
