Ingredients

For the Cake:

  • 2 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 5 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 cup whole milk (or buttermilk for a richer flavor)

For the Caramel Frosting:

  • 1 cup unsalted butter
  • 1 cup packed brown sugar (light or dark)
  • 1/4 cup whole milk (or heavy cream for extra richness)
  • 1 tsp vanilla extract
  • 2 1/2 cups powdered sugar (sifted)
  • 1/4 tsp salt (to balance the sweetness)

Instructions

1. Preheat and Prepare the Cake Pan:

  • Preheat your oven to 350°F (175°C).
  • Grease and flour two 9-inch round cake pans (or one 9×13-inch pan if you prefer a sheet cake) or line the bottoms with parchment paper.

2. Make the Cake Batter:

  • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In a large bowl, cream together the butter and granulated sugar using an electric mixer on medium speed until light and fluffy, about 3-5 minutes.
  • Add the eggs, one at a time, beating well after each addition. Scrape down the sides of the bowl as needed.
  • Mix in the vanilla extract.
  • Gradually add the dry ingredients in three parts, alternating with the milk (beginning and ending with the dry ingredients). Mix until just combined. Be careful not to overmix.

3. Bake the Cake:

  • Pour the batter evenly into the prepared pans.
  • Bake for 30-35 minutes (for 9-inch pans) or 45 minutes (for a 9×13-inch pan), or until a toothpick inserted into the center comes out clean.
  • Let the cakes cool in the pans for about 10 minutes, then turn out onto wire racks to cool completely.

4. Make the Caramel Frosting:

  • In a medium saucepan, melt the butter over medium heat. Stir in the brown sugar and milk.
  • Bring to a boil, stirring constantly, and let it simmer for about 2-3 minutes. The mixture should bubble up, and the sugar should be completely dissolved.
  • Remove from heat and stir in the vanilla extract and salt.
  • Gradually add the sifted powdered sugar, stirring well to combine. The frosting will be a bit runny, but it will firm up as it cools slightly. If it’s too thick, add a little more milk to adjust the consistency.

5. Frost the Cake:

  • Once the cakes have completely cooled, place one layer on a serving plate or cake stand.
  • Spread a generous layer of caramel frosting on top of the first layer.
  • Place the second layer on top, and then spread the frosting evenly over the top and sides of the entire cake.
  • If desired, you can let some of the frosting drip down the sides for a rustic, homemade look.

Tips:

  • Extra Moisture: For a richer, denser flavor, you can use buttermilk in the cake instead of regular milk. It gives a slightly tangy flavor that balances the sweetness of the caramel.
  • Frosting Texture: If the frosting seems too runny, let it cool slightly before frosting the cake. If it’s too thick, add a little more milk or cream to loosen it up.
  • For Extra Caramel Flavor: You can add a bit of dark rum or bourbon to the caramel frosting for an extra flavor twist if you want a bit of depth (just a teaspoon or two).
  • Make Ahead: You can bake the cake layers in advance, then wrap them tightly in plastic wrap and store them at room temperature for up to 2 days. The frosting can also be made ahead, just make sure to reheat it slightly to spread.
