Crust

  • 1 ½ cups graham cracker crumbs

  • ¼ cup granulated sugar

  • 5 tbsp unsalted butter, melted

Filling

  • 24 oz (680 g) cream cheese, softened

  • 1 cup granulated sugar

  • 1 tsp vanilla extract

  • 3 large eggs

  • ½ cup sour cream or heavy cream

  • Whipped cream

1. Prepare crust

  • Preheat oven to 325°F (160°C).

  • Mix graham cracker crumbs, sugar, and melted butter until evenly combined.

  • Press mixture into the bottom of a 9-inch springform pan (or a small dish for one slice).

  • Bake 8–10 minutes, then let cool.

2. Make filling

  • Beat cream cheese until smooth.

  • Gradually add sugar, then vanilla.

  • Add eggs one at a time, mixing gently.

  • Fold in sour cream or heavy cream until creamy.

3. Bake

  • Pour filling over the cooled crust.

  • Bake 45–55 minutes, or until center is set but slightly jiggly.

  • Optional: Place pan in a water bath for a smoother, crack-free cheesecake.

4. Cool and chill

  • Let cheesecake cool to room temperature, then refrigerate 4+ hours (overnight is best).
