Here’s a classic, simple egg salad sandwich recipe that’s creamy, flavorful, and quick to make:


Ingredients (makes 2 sandwiches)

  • 4 hard-boiled eggs, peeled and chopped
  • 2–3 tbsp mayonnaise (adjust to taste)
  • 1 tsp Dijon mustard (optional, for a tangy kick)
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1–2 tsp chopped fresh herbs (like chives, parsley, or dill – optional)
  • 4 slices of bread (white, whole wheat, or your choice)
  • Optional: lettuce, tomato slices, or pickles

Instructions

  1. Prepare the eggs:
    • Chop the hard-boiled eggs into small pieces.
  2. Make the egg salad:
    • In a bowl, mix chopped eggs, mayonnaise, mustard, salt, pepper, and herbs (if using).
    • Stir until well combined. Adjust seasoning to taste.
  3. Assemble the sandwich:
    • Spread the egg salad evenly on 2 slices of bread.
    • Top with optional lettuce, tomato, or pickles.
    • Close the sandwich with the remaining bread slices.
  4. Serve:
    • Cut diagonally and enjoy immediately, or chill for 10–15 minutes for a firmer texture.
