Oatmeal pancakes

Here’s a simple, healthy recipe for oatmeal pancakes that’s fluffy and easy to make:


Ingredients (makes ~6 pancakes)

  • 1 cup rolled oats
  • 1 cup milk (dairy or plant-based)
  • 1 egg
  • ½ cup all-purpose flour (or whole wheat)
  • 1 tbsp sugar or honey (optional)
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 tsp vanilla extract (optional)
  • Butter or oil for cooking

Instructions

  1. Prepare the oats:
    • In a bowl, combine oats and milk. Let sit for 5–10 minutes to soften (or blend for smoother pancakes).
  2. Mix the batter:
    • In another bowl, beat the egg and sugar/honey, then stir in the softened oats.
    • Add flour, baking powder, baking soda, salt, and vanilla. Mix until combined. The batter should be thick but pourable; add a little milk if needed.
  3. Cook the pancakes:
    • Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil.
    • Pour ¼ cup of batter for each pancake. Cook 2–3 minutes until bubbles form on top, then flip and cook another 1–2 minutes until golden.
  4. Serve:
    • Stack pancakes and serve with fruit, maple syrup, yogurt, or nut butter.
