-
2 cloves garlic, minced
-
1 medium tomato, diced (or ½ cup tomato sauce)
-
½ cup green peas (optional)
-
¼ cup raisins (optional, for a touch of sweetness)
-
2 tbsp olive oil
-
1 tsp ground cumin
-
1 tsp paprika
-
Salt and pepper, to taste
-
Optional: ½ cup green olives, sliced
-
Fresh cilantro or parsley, for garnish
👩🍳 Instructions
1. Cook the potatoes
-
Heat 1 tbsp olive oil in a large skillet over medium heat.
-
Add diced potatoes and cook until golden and slightly tender, about 8–10 minutes. Remove from skillet and set aside.
2. Cook the beef
-
In the same skillet, add remaining oil. Sauté onions and garlic until soft and fragrant.
-
Add ground beef and cook until browned, breaking it up with a spoon.
3. Add flavor
-
Stir in diced tomato or tomato sauce, cumin, paprika, salt, and pepper.
-
Simmer for 5 minutes until the mixture thickens slightly.
4. Combine ingredients
-
Add cooked potatoes, peas, raisins, and olives (if using). Mix gently.
-
Cook another 5–7 minutes, allowing flavors to meld.
5. Serve
-
Garnish with chopped cilantro or parsley.
-
Serve hot with rice, tortillas, or as a filling for empanadas.
🌟 Tips
-
Potato texture: Use firm potatoes to prevent them from turning mushy.
-
Extra flavor: Add a splash of Worcestershire sauce or a pinch of cinnamon for a subtle depth.
-
Vegetable variation: Bell peppers or carrots can be added for more color and nutrients.
