For the Filling:

  • 6 cups peeled and sliced apples (about 6 medium; Granny Smith, Honeycrisp, or a mix)
  • ¾ cup granulated sugar
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 teaspoon lemon juice
  • 2 teaspoons all-purpose flour (to thicken the juices)

For the Crisp Topping:

  • 1 cup old-fashioned oats
  • ¾ cup brown sugar (light or dark)
  • ½ cup all-purpose flour
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ cup (1 stick) cold unsalted butter, cut into small cubes

1. Preheat oven

  • Preheat to 350°F (175°C).
  • Grease a 9×9-inch baking dish (or similar).

2. Prepare the apple filling

  • In a large bowl, toss sliced apples with sugar, cinnamon, nutmeg, lemon juice, and flour until evenly coated.
  • Spread the mixture evenly in the prepared baking dish.

3. Make the crisp topping

  • In another bowl, combine oats, brown sugar, flour, salt, and cinnamon.
  • Cut in cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

4. Assemble and bake

  • Sprinkle the topping evenly over the apples.
