  1. Preheat oven to 400°F (200°C).
    • Line a baking sheet with parchment paper or a silicone mat.
  2. Mix dry ingredients
    • In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. Mix wet ingredients
    • In another bowl, whisk together buttermilk, eggs, vanilla, and melted butter.
  4. Combine
    • Pour wet mixture into dry mixture and stir until just combined.
    • Fold in diced apples (and nuts if using).
    • Batter will be thick.
  5. Portion and bake
    • Drop heaping spoonfuls (~3 tbsp each) onto the prepared baking sheet, spacing ~2 inches apart.

    • While fritters bake, whisk together powdered sugar, milk, and vanilla until smooth. Adjust thickness by adding more sugar or milk.
  7. Glaze and serve
    • Drizzle warm fritters with glaze immediately after baking.
