Here’s a simple and foolproof recipe that gives you chewy, buttery caramel balls that hold together perfectly (without sticking to everything).


🍯 Caramel Popcorn Balls

Ingredients (makes about 10–12 popcorn balls)

  • 10 cups popped popcorn (about ½ cup unpopped kernels)
  • 1 cup light brown sugar, packed
  • ½ cup light corn syrup
  • ½ cup unsalted butter (1 stick)
  • ½ tsp salt
  • 1 tsp vanilla extract
  • Optional: ½ tsp baking soda (for a lighter, crunchier texture)

Instructions

1. Prepare the popcorn

  • Pop your popcorn using an air popper or stovetop.
  • Transfer to a large bowl and remove any unpopped kernels (important so no one bites one!).
  • Lightly butter or spray your hands and a baking sheet for shaping later.

2. Make the caramel

  1. In a medium saucepan, combine butter, brown sugar, corn syrup, and salt.
  2. Bring to a boil over medium heat, stirring constantly.
  3. Once boiling, stop stirring and let it cook for 4–5 minutes (until it reaches about 235–240°F / soft-ball stage if using a candy thermometer).
  4. Remove from heat and stir in vanilla (and baking soda if using — it will foam a little).

3. Combine and shape

  1. Immediately pour the caramel over the popcorn.
  2. Gently toss with a spatula until popcorn is evenly coated.
  3. When cool enough to handle but still warm, butter your hands and form into balls about the size of a baseball.
  4. Place on a buttered or parchment-lined baking sheet to cool completely.

Storage

  • Store in an airtight container at room temperature for up to a week.
  • Wrap each in plastic wrap or wax paper if gifting or packing for parties.

Optional Add-Ins

Mix into the popcorn before adding caramel for fun variations:

  • Mini marshmallows
  • Chopped peanuts or pecans
  • Chocolate chips (add after it cools slightly so they don’t melt)
  • A drizzle of melted chocolate over the finished balls
