Chicken pasta

Here’s a creamy chicken pasta recipe that’s comforting, flavorful, and easy to make — perfect for a weeknight dinner 🍝🐔


🍗 Creamy Chicken Pasta

Ingredients (Serves 3–4)

  • 2 chicken breasts (or thighs), cut into bite-sized strips

  • 250 g (about 9 oz) pasta (penne, fettuccine, or your favorite)

  • 2 tbsp olive oil or butter

  • 3 cloves garlic, minced

  • 1 small onion, finely chopped

  • 1 cup (240 ml) heavy cream (or half-and-half for lighter version)

  • ½ cup (50 g) grated Parmesan cheese

  • ½ cup (120 ml) chicken broth (or water + bouillon)

  • 1 tsp Italian seasoning (or mix of basil, oregano, thyme)

  • Salt & black pepper, to taste

  • Optional: spinach, mushrooms, or sun-dried tomatoes for extra flavor

  • Fresh parsley or basil for garnish


👩‍🍳 Instructions

  1. Cook the pasta:
    Boil in salted water until al dente. Reserve ½ cup of pasta water, then drain and set aside.

  2. Cook the chicken:
    Season chicken with salt and pepper.
    Heat olive oil in a large skillet over medium heat.
    Add chicken and sauté for 5–7 minutes, until golden and cooked through. Remove and set aside.

  3. Make the sauce:
    In the same pan, add a little more oil if needed. Sauté onion until soft (2–3 min), then add garlic for 30 seconds.
    Pour in chicken broth and scrape up any browned bits.
    Add cream and Italian seasoning. Simmer 2–3 minutes until slightly thickened.

  4. Combine:
    Stir in Parmesan cheese until melted.
    Add cooked pasta and chicken back to the pan. Toss well to coat.
    If the sauce feels too thick, add a splash of the reserved pasta water.

  5. Finish:
    Taste and adjust seasoning. Garnish with parsley or basil and extra Parmesan.


🌶️ Optional Variations

  • Spicy version: Add chili flakes or a spoon of chili paste.

  • Garlic butter version: Replace olive oil with butter and double the garlic.

  • Veggie boost: Stir in baby spinach, broccoli, or cherry tomatoes near the end.
