Here’s a simple and delicious Rotel Cream Cheese Sausage Balls recipe that’s super easy to make:

Ingredients:

  • 1 lb (16 oz) breakfast sausage (mild or spicy, your choice)
  • 8 oz cream cheese, softened
  • 2 cups shredded cheddar cheese
  • 2 cups Bisquick (or any baking mix)
  • 1 can (10 oz) Rotel diced tomatoes & green chilies, drained

Instructions:

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mix ingredients: In a large bowl, combine the sausage, softened cream cheese, shredded cheddar, Bisquick, and drained Rotel. Mix until well combined (you may need your hands).
  3. Form balls: Roll the mixture into 1-inch balls and place them on the prepared baking sheet.
  4. Bake: Bake for 25–30 minutes, or until golden brown and cooked through.
  5. Serve: Let cool slightly, then serve warm.

💡 Tips:

  • If the mixture is too sticky, chill it in the fridge for 15–20 minutes before rolling into balls.
  • These can be frozen before baking—just add a few extra minutes to the bake time.
