Strawberry cake

Here’s a delicious strawberry cake recipe that’s moist, fruity, and perfect for any occasion. I’ll give a simple version with fresh strawberries.


Ingredients

For the Cake:

  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup buttermilk (or milk + 1 tsp vinegar)
  • 1 cup fresh strawberries, chopped

For the Strawberry Frosting (Cream Cheese Version):

  • 8 oz (225g) cream cheese, softened
  • ½ cup unsalted butter, softened
  • 2–3 cups powdered sugar, sifted
  • ½ teaspoon vanilla extract
  • ¼ cup strawberry puree (blend fresh strawberries)

Instructions

1. Prep the oven and pan

  • Preheat oven to 350°F (175°C).
  • Grease and flour an 8-inch or 9-inch round cake pan.

2. Make the cake batter

  1. In a bowl, whisk flour, baking powder, baking soda, and salt.
  2. In another bowl, beat butter and sugar until light and fluffy.
  3. Add eggs one at a time, then vanilla.
  4. Alternate adding dry ingredients and buttermilk, starting and ending with dry ingredients. Mix until just combined.
  5. Gently fold in chopped strawberries.

3. Bake

  • Pour batter into prepared pan.
  • Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
  • Let cool completely before frosting.

4. Make the frosting

  1. Beat cream cheese and butter until smooth.
  2. Gradually add powdered sugar, then vanilla and strawberry puree.
  3. Mix until creamy and spreadable.

5. Assemble the cake

  • Frost cooled cake generously with strawberry cream cheese frosting.
  • Optional: garnish with fresh strawberry slices on top.

✅ Tips:

  • For extra strawberry flavor, fold in a few teaspoons of strawberry jam into the batter.
  • Make sure the cake is fully cooled before frosting to prevent melting.
  • You can double the recipe for a layered cake.
