Southern fried chicken

Here’s a classic Southern Fried Chicken recipe — crispy, golden, juicy inside, and packed with flavor. 🍗✨

🍗 Southern Fried Chicken Recipe

Ingredients

  • 3–4 lbs (1.5–2 kg) chicken pieces (drumsticks, thighs, breasts, wings)
  • 2 cups buttermilk
  • 2 cups all-purpose flour
  • 1 tbsp paprika
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp cayenne pepper (optional, for heat)
  • 1 tsp salt
  • 1 tsp black pepper
  • Vegetable oil or peanut oil, for frying

Instructions

  1. Marinate the chicken:
    • Place chicken pieces in a large bowl.
    • Pour buttermilk over the chicken and let it soak at least 2 hours, or overnight for extra tenderness.
  2. Prepare the flour coating:
    • In a shallow bowl or large plate, mix flour, paprika, garlic powder, onion powder, cayenne (if using), salt, and black pepper.
  3. Coat the chicken:
    • Remove chicken from buttermilk, letting excess drip off.
    • Dredge each piece in the seasoned flour, pressing lightly to adhere.
    • For extra crispy crust, dip back in buttermilk briefly and dredge in flour again (double dredge).
  4. Heat the oil:
    • In a deep skillet or Dutch oven, heat oil to 350°F (175°C).
    • Use enough oil to submerge chicken halfway.
  5. Fry the chicken:
    • Carefully add chicken pieces to the hot oil without overcrowding.
    • Fry 12–15 minutes per side, or until golden brown and internal temperature reaches 165°F (74°C) for breasts, 175°F (80°C) for dark meat.
    • Adjust heat to maintain oil temperature (not too hot to burn the crust).
  6. Drain and rest:
    • Transfer fried chicken to a wire rack or paper towels to drain excess oil.
    • Let rest 5–10 minutes before serving — this helps keep it juicy.

🍴 Tips & Variations

  • Brining: For extra juicy chicken, brine in saltwater for 1–2 hours before marinating in buttermilk.
  • Spicy Southern Style: Add cayenne pepper or hot sauce to the buttermilk marinade.
  • Oven-Finish Option: Fry for 5–7 minutes per side to get golden crust, then finish in a 375°F oven for 10 minutes for thicker pieces.

I can also give a crispy, extra-crunchy “double-fried” Southern fried chicken recipe that rivals KFC if you want. Do you want that version?
