Ingredients

  • Mix and knead for 8–10 minutes until smooth and elastic.

3. First Rise

  • Place dough in a greased bowl.
  • Cover and let rise in a warm place for 1 hour, or until doubled.

4. Shape the Bread

  • Punch down dough and shape into an oval or round flat loaf.
  • Place on a baking tray lined with parchment.
  • Use your fingers to create a crisscross pattern on top (traditional look).

5. Second Rise

  • Cover and let rest for 15–20 minutes.

6. Add Topping

  • Mix egg yolk with a little water and brush over the dough.
  • Sprinkle sesame or nigella seeds.

7. Bake

  • Preheat oven to 220°C (425°F).
  • Bake for 12–18 minutes until golden brown.
