📝 Ingredients (Serves 4):

  • 2 tbsp olive oil or butter
  • 1 onion, chopped
  • 2–3 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 bell pepper, diced
  • 1–2 potatoes, diced
  • 1 zucchini or squash, chopped
  • 1 cup green beans or peas
  • 4 cups vegetable broth or water
  • 1 can diced tomatoes (optional)
  • Salt and pepper to taste
  • 1 tsp dried herbs (thyme, oregano, or Italian seasoning)
  • Fresh parsley for garnish

  1. Sauté the aromatics
    • Heat olive oil in a large pot.
    • Sauté onions and garlic until soft and fragrant.
  2. Add root vegetables
    • Add carrots, celery, and potatoes. Cook 3–4 minutes.
  3. Add broth and tomatoes
    • Pour in vegetable broth and canned tomatoes (if using).
    • Bring to a boil, then reduce heat and simmer 10–15 minutes.
  4. Add remaining vegetables
    • Add bell peppers, zucchini, green beans, or peas.
    • Simmer another 10 minutes until all vegetables are tender.
  5. Season and serve
    • Add salt, pepper, and herbs to taste.
    • Garnish with fresh parsley and serve hot.
