🍗 Slow Cooker Cranberry Chicken

Ingredients

  • 4 chicken breasts (boneless, skinless)
  • 1 cup whole cranberry sauce (or fresh cranberries cooked slightly with sugar)
  • ¼ cup orange juice
  • 2 tablespoons honey
  • 1 teaspoon garlic, minced
  • 1 teaspoon soy sauce (optional for umami)
  • Salt & black pepper to taste
  • Optional: 1 teaspoon ginger, grated

Instructions

1️⃣ Prep the Slow Cooker

  • Spray the slow cooker with non-stick cooking spray or lightly oil.

2️⃣ Mix the Sauce

  • In a bowl, combine cranberry sauce, orange juice, honey, garlic, soy sauce, ginger, salt, and pepper.

3️⃣ Add Chicken

  • Place chicken breasts in the slow cooker and pour the cranberry mixture over them.

4️⃣ Cook

  • Cover and cook on low for 4–5 hours or high for 2–3 hours, until chicken is tender and easily shredded.

5️⃣ Finish & Serve

  • Optional: Shred chicken in the sauce for a casserole-style dish.
  • Serve over rice, quinoa, mashed potatoes, or alongside roasted vegetables.

Tips

  • Add chopped onions or bell peppers to the slow cooker for extra flavor.
  • For a thicker sauce, remove the chicken at the end and simmer the sauce on the stove for a few minutes.
  • Leftovers can be used for sandwiches or wraps.
