Harvard Beets

🥗 Harvard Beets (Sweet & Tangy Classic)

Harvard Beets are a traditional American side dish made with tender beets in a glossy, sweet-sour sauce—simple but very flavorful.


Ingredients

  • 2 cups cooked, sliced beetroot
  • ¼ cup sugar
  • 2 tablespoons vinegar (apple cider or white)
  • 1 tablespoon butter
  • 1 tablespoon cornstarch
  • ½ cup water
  • Pinch of salt

Instructions

  1. Prepare beets
    Boil or steam beetroot until tender, then slice or cube.
  2. Make the sauce
    In a pan, mix sugar, vinegar, water, and cornstarch. Stir well to avoid lumps.
  3. Cook until thick
    Heat on medium, stirring constantly until the sauce thickens and becomes glossy.
  4. Add butter & beets
    Stir in butter, then add the cooked beets.
  5. Simmer briefly
    Cook for 5–7 minutes until everything is well coated and heated through.

  • Flavor: sweet, tangy, slightly buttery
  • Serve warm as a side with meat, rice, or even roti
