Here’s a simple, flavorful recipe for chicken thighs in a savory sauce—rich, comforting, and perfect with rice or mashed potatoes:


Savory Chicken Thighs

Ingredients (serves 4):

  • 4–6 bone-in, skin-on chicken thighs
  • Salt and black pepper, to taste
  • 2 tbsp olive oil
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • ½ cup heavy cream (or coconut milk for a lighter version)
  • 1–2 tsp Dijon mustard (optional)
  • 1 tsp dried thyme or 1 tbsp fresh thyme
  • 1 tsp paprika
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season and sear the chicken:
    • Pat chicken dry and season with salt, pepper, and paprika.
    • Heat olive oil in a skillet over medium-high heat.
    • Sear chicken skin-side down until golden brown (5–7 minutes), then flip for 3–4 minutes. Remove chicken and set aside.
  2. Cook aromatics:
    • In the same skillet, sauté onions and garlic until soft and fragrant (~3 minutes).
  3. Make the sauce:
    • Add chicken broth, cream, Dijon mustard, and thyme. Stir and bring to a gentle simmer.
  4. Simmer chicken in sauce:
    • Return chicken to the skillet, skin-side up.
    • Cover and cook on low for 20–25 minutes until chicken is fully cooked (internal temp 165°F / 74°C).
  5. Finish & serve:
    • Remove chicken, stir the sauce, and adjust seasoning.
    • Serve chicken with sauce spooned over the top. Garnish with parsley.

💡 Tips:

  • For extra flavor, deglaze the pan with a splash of white wine before adding the broth.
  • Add mushrooms, bell peppers, or carrots to the sauce for a one-pan meal.
  • Serve with mashed potatoes, rice, or crusty bread to soak up the sauce.
