Here’s a delicious and easy recipe for crispy, flavorful chicken thighs that works for both bone-in and boneless:


Garlic Herb Roasted Chicken Thighs

Ingredients (serves 4):

  • 4 chicken thighs (bone-in, skin-on preferred)
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 tsp paprika
  • 1 tsp dried thyme (or 1 tbsp fresh)
  • 1 tsp dried rosemary (or 1 tbsp fresh, chopped)
  • Salt and pepper to taste
  • Optional: 1 lemon, sliced

Instructions:

  1. Preheat oven: 425°F (220°C).
  2. Prepare the chicken: Pat the chicken thighs dry with paper towels (this helps the skin get crispy).
  3. Season: In a small bowl, mix olive oil, garlic, paprika, thyme, rosemary, salt, and pepper. Rub this mixture all over the chicken thighs.
  4. Arrange: Place the chicken thighs on a baking sheet or oven-safe pan, skin side up. If using lemon, place slices around the chicken.
  5. Roast: Bake for 35–40 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown.
  6. Optional broil: For extra crispy skin, broil for 2–3 minutes at the end—watch carefully to avoid burning.
  7. Rest & serve: Let chicken rest for 5 minutes before serving. Enjoy with roasted veggies, rice, or salad.

💡 Tips:

  • Boneless thighs take slightly less time (~25–30 minutes).
  • Marinating the chicken for a few hours or overnight enhances flavor.
  • You can swap herbs with smoked paprika, oregano, or parsley for variation.
