Here’s a simple and delicious way to make Slow Cooker Onion Butter Potatoes that are soft, flavorful, and buttery:


Ingredients

  • 2 lbs small potatoes (red or baby potatoes work best), halved
  • 1 large onion, thinly sliced
  • 4 tbsp unsalted butter, cut into small pieces
  • 2 cloves garlic, minced (optional for extra flavor)
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 1 tsp fresh thyme or rosemary (optional)
  • 2–3 tbsp chicken or vegetable broth (optional for extra moisture)

Instructions

  1. Prepare the potatoes
    Wash and halve the potatoes. If they’re very small, leave them whole.
  2. Layer ingredients in the slow cooker
    • Place sliced onions at the bottom.
    • Add potatoes on top.
    • Sprinkle garlic, salt, pepper, and herbs.
    • Dot the butter pieces over the potatoes.
  3. Add moisture (optional)
    Pour 2–3 tbsp of broth over the potatoes to help them steam and absorb flavor.
  4. Cook
    • Cover and cook on low for 6–7 hours or high for 3–4 hours, until potatoes are tender and buttery.
  5. Finish & serve
    • Gently stir to coat potatoes with melted butter and onions.
    • Garnish with fresh parsley if desired.

  • Red potatoes hold their shape well; Yukon Golds give a creamier texture.
  • For extra flavor, add a splash of balsamic vinegar or sprinkle grated Parmesan before serving.
