Ingredients

Soup

  • 4–5 large yellow onions (thinly sliced)
  • 3 tbsp butter

  • ½ cup dry white wine (optional)
  • 1 tsp fresh thyme or ½ tsp dried

  • Optional: Parmesan cheese

Instructions

1️⃣ Caramelize the onions

  • Melt butter with olive oil in a large pot.
  • Add sliced onions and sugar.
  • Cook on medium-low heat for 30–40 minutes, stirring often, until deep golden brown.

2️⃣ Build the soup

  • Add garlic and cook for 1 minute.
  • Pour in white wine and scrape the pot.
  • Add beef broth and thyme.
  • Simmer for 20 minutes.

3️⃣ Prepare the bread

  • Toast baguette slices in the oven until crisp.

4️⃣ Assemble

  • Ladle soup into oven-safe bowls.
  • Place toasted bread on top.
  • Sprinkle generously with Gruyère cheese.

5️⃣ Broil

  • Put bowls under the oven broiler for 2–4 minutes until the cheese melts and bubbles.
