Grinder Pasta Salad

Grinder Pasta Salad is a viral Italian-sub–inspired pasta salad that became popular on the TikTok. It combines the flavors of a grinder sandwich (Italian deli sub) with pasta, making it creamy, tangy, and packed with deli meats and veggies. 🥗🍝

Ingredients

Pasta & Mix-ins

  • 12 oz pasta (rotini or bowtie work best)
  • 1 cup shredded iceberg lettuce
  • ½ cup sliced pepperoncini
  • ½ cup cherry tomatoes (halved)
  • ½ small red onion (thinly sliced)
  • ½ cup sliced black olives (optional)

Deli Meat & Cheese

  • ½ cup chopped salami
  • ½ cup chopped pepperoni
  • ½ cup chopped turkey or ham
  • 1 cup cubed provolone or mozzarella cheese

Creamy Grinder Dressing

  • ¾ cup mayonnaise
  • 2 tbsp red wine vinegar
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ cup grated parmesan cheese

Instructions

  1. Cook the pasta
    Boil pasta in salted water until al dente. Drain and rinse with cold water so it cools quickly.
  2. Prepare the dressing
    In a bowl, whisk together mayonnaise, red wine vinegar, olive oil, parmesan, and spices.
  3. Mix the salad
    In a large bowl combine:

    • cooled pasta
    • deli meats
    • cheese cubes
    • tomatoes, onion, olives, and pepperoncini.
  4. Add dressing
    Pour the dressing over everything and toss well.
  5. Finish with lettuce
    Fold in the shredded lettuce right before serving so it stays crisp.
  6. Chill
    Refrigerate for about 30–60 minutes for the best flavor.

✅ Tips

  • Add banana peppers for extra tang.
  • Use tri-color rotini for a nicer look.
  • If making ahead, keep the lettuce separate and mix it in later.
